I am writing after what it seemed like a marathon in the kitchen. I knocked out six pies for people tomorrow. It was really fun to make such a large quantity and also a learning experience on how to run things better. I got a bit of a system going now.
I also purchased a hand mixer which saved my life today. If I were to hand-whisk the cream, I would have shot myself....
